Meatloaf

This is a classic, traditional recipe of the meatloaf with an Asian influence. I took to baking this more often when my son graduated to adult food a year ago and I was on a mission to feed him meat, veggies and everything healthy every meal. Honestly, it was also one of those meals that didn’t require much cleanup :)
If you’re someone who has a toddler who is extremely curious about food and wants to explore with fingers, you know what I mean!
So, this is truly like a one pot recipe. To whoever is fascinated with a balanced diet. Carbs, protein, fat and essential vitamins all in a slice of the classic meatloaf. Works as a snack or as main course dinner served with some sautéed veggies, garlic mashed potatoes et al.
Ingredients
450 grams of ground meat. You could use chicken, pork, beef or lamb, really your choice
1 cup grated carrot
1/2 a cup finely chopped onion
A handful of green peas
1/2 a cup of bread crumbs
One egg beaten
1 table spoon olive oil
1 teaspoon ground black pepper
1/4 teaspoon Chinese Five Spice Powder. This is optional, but adds more flavour and also an Asian taste to the meatloaf.
Salt to taste
Sauce of your choice for basting
Method
To begin with, preheat the oven to 200 degrees Celsius. Grease a loaf tin and set aside.
In a mixing bowl, mix the ground meat, carrot, onion, peas, egg, five spice powder, salt and pepper. Throw in the bread crumbs and the olive oil and mix well. Now, form a loaf from the mixture and transfer this to the greased loaf tin or baking tray, whatever suits you best. Spread some sweet chilli sauce on top to form a crust. You could use any sauce of your choice. Cherry sauce, plum sauce, chilli sauce just about anything you fancy.
Bake for 30 to 40 minutes or until the meat is well cooked. Insert a skewer in the centre of the loaf to check if done or not. Generally, the baking time is within 45 minutes.
For extra flavour and a nice crust, baste some of the sauce you used for the crust every 10 to 15 minutes. This will also help keep the loaf moist.
