Butter Cookies

Cookies have always been one of my favourite munchies. As a child, I loved those after-Sunday School trips to bakeries, deciding which decorated cookie to pick, drooling over fresh, hot, melting cookies....different shapes, different sizes...so many toppings to choose from, a treat to your senses!
It's a different high altogether knowing you can make them yourself. You most definitely don't need any of those hi-fi baking skills. Simple butter cookies are as simple to make as they sound. You can always experiment with nuts, raisins, cinnamon sugar, vanilla cream and so much more.
You really don't have to fret next time someone dropped in for tea.
Ingredients
1 cup butter
1 cup white sugar
1 egg
2 1/2 cups flour
A pinch of salt
2 teaspoons vanilla sugar
Method
Cream together the sugar and butter until smooth and fluffy. Add the egg and vanilla sugar and mix well. Sift in the flour and salt and mix well to form the dough. Cover the dough in a cling film, foil or any air tight container and refrigerate for an hour.
Preheat the oven to 200°C. Cut out little shapes using a cookie cutter. If you don't have one, you can simply make round balls and flatten them down. Bake for 8 to 10 minutes or until lightly golden at the edges. Cool and serve.
