Hariyali Jhinga

The other day, my husband and I were in a rather sombre mood discussing environment, green initiatives and what a healthy world we wish for our little boy.
When we finally decided to start making dinner, I asked him what he would like and he jokingly said, "Something Green!", which triggered this recipe.
I had some spring onion, coriander leaves, mint leaves, parsley and green chillies lying in my refrigerator. Yeah, I know too much green! Put them all together with some prawns and voila, we were ready with " Something Green" :-)
Ingredients
400 grams de-veined and cleaned prawns
1 medium sized onion
A fistful of spring onion
A fistful of parsley
1 teaspoon ginger garlic paste
1 bunch of coriander leaves finely chopped
1/2 bunch of mint leaves finely chopped
3-4 green chillies
A fistful of curry leaves
1 teaspoon lime juice
1 teaspoon garam masala powder
A pinch of turmeric powder
1 tablespoon crushed black peppercorns
Salt to taste

Method
In a wide non-stick pan, fry onions and spring onions till light brown. Add a pinch of turmeric and ginger garlic paste and sauté.
In a mixer, make a fine paste of parsley, coriander leaves, mint leaves, curry leaves and green chillies. Add this paste to the pan and fry until the mixture starts giving out moisture. Now add the prawns and mix well so each prawn is evenly coated with the green paste. Add the crushed pepper, garam masala and salt and stir. Cover and cook for a maximum of 5 to 7 minutes on medium flame. Always remember prawns must not be overcooked. They tend to become very chewy and rubbery if overcooked. You may want to check in between to ensure you're not overcooking the prawns. Once cooked, turn off the flame, add the lime juice and mix well. Sprinkle some chopped coriander leaves and you're ready to go green!
