Blueberry Muffins

It's been a while now since I've seen my younger sister, Vandita who absolutely loves blueberry muffins and can devour them by the dozen. It used to be her standard order at cafes and I must admit, my love affair with this yummy snack began somewhere in between those small bites and long girlie conversations...
So, on one of those days when my son, Neil was at his best behaviour, I set out to make blueberry muffins, reliving all those wonderful times with my sister during the course of baking it!
What would the world be without younger sisters to pamper! Here's to sisters and muffins, Blueberry muffins! :-)
Ingredients
1 cup blueberries
1 egg
1 cup flour
1/2 cup sugar
1/4 cup melted butter
1/4 cup skimmed milk
1 teaspoon vanilla sugar
1 teaspoon baking powder
A pinch of salt
Method
Begin by preheating the oven to 175°C and grease muffin cups. Beat together the melted butter, eggs, salt and sugar to form a creamy mixture. Sift in the flour and baking powder slowly alternating it with milk. This is best done in batches. Mix well. Add vanilla sugar and mix. Add the blueberries and give it one good whisk. Pour the batter into the greased muffin moulds and bake for 30 minutes. Remove, cool and serve.
