Guacamole (Mexican Avocado Dip)

I first sampled this at a Mexican restaurant at Warsaw during a holiday last year. I’ve been meaning to make this since then and didn’t need more incentive when I realised how healthy a dip it was and suitable for my little boy as well. Yeah, I’m always trying to dish up something that won’t be too strong for my 2 year old son as well.
With Avocados contributing to a very high nutritional value, this is truly one of those healthy, 10-minute-snack recipes. Works very well with nachos or just as simple tortilla wrap filling or even as the humble sandwich spread. Go ahead and treat yourself to this Mexican delight today!
Ingredients
2 ripe Avocados
1 small onion finely chopped
1 small tomato finely chopped
Juice of half a small lemon or approximately 2 to 3 tablespoons
1 teaspoon minced jalapenos or to taste ( I usually tone this down as jalapenos get too strong for my little boy). For a milder taste, you may want to deseed before using.
Salt to taste
Pepper to taste
Method
Peel and mash the avocados in a bowl using a fork. Add the minced onions, tomatoes, jalapenos, lemon juice, salt and pepper and mix well. Voila, ready to serve. Can’t get simpler, right?
Remember though that the lemon juice, of course in addition to contributing to sourness also helps prevent oxidation of the avocados. So, if you don’t want the avocados turning black, get your lemon juice in there right at the start.
Also, I prefer chunky than creamy so, I don't go overboard with the mashing. Of course, traditionally, the ingredients are mashed and pureed really well, but I could do with more texture on my plate. It really is a matter of preference!
Serve with Cheese Nachos, Taco shells or Tortillas.
