Cheese and Cutney Sandwiches
If you’ve already seen my Mint and Coriander Chutney recipe, you probably know by now that I was nowhere close to kidding when I said, don’t hit the panic button when you have surprise guests. :)
So, here’s that evening snack bite you’re craving for or just probably even light dinner with some egg salad for company. Take a break from those three course dinners for a change!
Ingredients
1 cup Mint and Coriander Chutney
1cup low fat grated cheese
1/2 a cucumber sliced into thin discs
1 tomato sliced into thin discs
Butter (Hmmm, this is tricky, if you’re adding cheese as well! A light spread, maybe. Your call!)
Method
So, prep the bread with butter. Cut into sandwich triangles. On one side, sprinkle the cheese and lay the cucumber and on another, spread the chutney and lay the tomatoes. Cover to form a whole sandwich and dig in!
